Will a 2" schedule 40 PVC pipe fit inside of the 2' socket end of this fitting?

Whenever you see a size associated with a fitting, it tells you what the fitting pairs with. You must also look at the end type. So a 1-1/2" male threaded end will pair with a 1-1/2" female threaded end. Socket end types are made to fit OVER pipe, so a 2" socket end will fit over a 2" pipe.

Just to be sure is this fitting 1.5" male threaded to 2" female slip

You are correct. The first size listed will match the first end type listed, so this fitting has a 1-1/2" male threaded end and a 2" socket (slip) end.
