Since I am not a plumber, here it goes: I have a pipe, labeled Schedule 40 PVC, 8". Does this particular piece fit it, and can it be glued on?

Anytime you see a fitting labeled with a size, such as 8", that tells you what pipe it pairs with, so yes, this fitting will pair with your 8" pipe. Also, "soc x fpt" means one end is socket/slip, which slides over your pipe and needs to be glued on, and the other end is threaded internally.
